Cake Honey

1 c brewed coffee
1/2 c cocoa powder
1 3/4 c honey
3T brandy or strong brewed tea (I use tea)
4 eggs
4T vegetable oil
1 1/4 c dark brown sugar
3 1/2 c all-purpose flour
3t baking powder
1t baking soda
1t cinnamon
1/4t ground cloves
1/4t nutmeg
1/2 c chopped toasted almonds (optional)
1/2 c golden raisins (optional)

1. In a saucepan, combine the coffee, cocoa and honey. Bring to a boil. Remove from heat. When mixture has cooled, stir in brandy or tea.

2. Place eggs in a mixing bowl and beat, using a hand-held or upright mixer. Stir in oil and brown sugar. Set aside.

3. Sift together flour, baking powder,baking soda, cinnamon, cloves and nutmeg into a second bowl. Stir in nuts and raisins. Set aside.

4. Starting with the flour mixture, alternately add the flour by thirds and the honey mixture by halves to the beaten eggs, oil and brown sugar. Stir after each addition.

5. Pour batter into two generously greased and floured 9 x 5 inch loaf pans. Bake in preheated 300 oven for 75 minutes or until cake tester comes out clean. Cool, then turn out onto platter. I sometimes sprinkle powedered sugar on the top.
