Italian Cream Cake by hilltop
1 stick butter, soft
1 stick margerine
1 1/2 c sugar
2 tsp vanilla
5 eggs, separated
1 tsp soda
2 c flour
1/2 tsp salt
1 c coconut
1 c buttermilk
1/2 c fig jam or jelly
Frosting
1 stick butter, soft
1 box powdered sugar
1 8 oz cream cheese, soft
1 tsp vanilla
1 c nuts
Cream butter, margarine & sugar. Add vanilla & egg yolks. Beat 5 min. Mix together dry ingredients & add alternately with buttermilk.
Mix well, add coconut, then beat egg whites & fold in by hand.
Bake in lined pans 350 20 min. Cool.
Between each layer spread jam all the way to the ege, very thinly with an offset spatula.
Beat together frosting & add nuts if you like.
I always spread, then pipe the frosting on, chop pecans & sprinkle them in the center instead of adding them to the frosting.
