Cake Italian Wedding

ITALIAN WEDDING CAKE

l tsp baking soda
l c buttermilk
l/2 c butter
l/2 c shortening
2 c sugar
5 eggs, seperated
l tsp vanilla
2 c flour
l c Angel Flake coconut
l c chopped walnuts
Cream Cheese Icing (recipe follows)
chopped walnuts (for garnish)

Dissolve baking soda in buttermilk and set aside. Cream butter and shortening; add sugar and beat until creamed.
Add egg yolks and mix thoroughly. Stir in vanilla.

Alternately add flour and buttermilk baking soda mixture to the butter mixture.

Stir in coconut and chopped walnuts. Beat egg whites until stiff. Fold into cake batter; turn batter into 3 greased
and floured 9 inch cake pans.

Bake in a preheaated 350 degree oven for 30 minutes or until done. Cool on wire racks. Frost with Cream Cheese Icing and sprinkle top with chopped walnuts.

CREAM CHEESE ICING

l/4 c butter
8 oz cream cheese
l lb confectioners sugar
l t vanilla

Cream butter and cream cheese together until well blended. Add confectioners sugar and vanilla. Mix until thoroughly creamed.
