Kentucky Butter Cake
3 cups all purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking powder
1 cup buttermilk
1 cup softened butter
1 T vanilla (pure vanilla) or Rum extract
4 eggs
Butter sauce:
3/4 cup sugar
1/3 cup butter
3 Tablespoons water
1 to 2 teaspoons vanilla (Pure not extract)
Preheat oven to 325. Grease and flour 12 cup bundt pan or 10 inch tube pan. Lightly spoon four into measuring cup; level off. In large bowl, blend all cake ingredients at low speed until moistened. Using the WHIP attachment on the larger mixers is best. Beat for 5 minutes at medium speed. Don't hurry this. Pour into prepared pan. Bake for 45 minutes or until done. Test with toothpick.
In a small saucepan over low heat.. combine all sauce ingredients, stirring occasionally until butter melts. DO NOT BOIL or do this on high. It will burn. Using a long tines fork.... pierce cake 10 to 15 times all over. Slowly pour sauce over cake and let it absorb. Watch this ... AS SOON as the sauce is absorbed...turn over onto dish
IMMEDIATELY... or it will stick in pan and be a huge mess. LEt cool for 15 to 20 minutes.. sprinkle with powdered sugar... serve warm.
