Kevin Cakes
1 1/4 cups brown sugar
1 cup butter, divided
1/2 cup milk, divided
1 tsp. vanilla
12 oz. bag white chocolate chips
3 large eggs
2 3/4 cups all-purpose flour
1/2 cup sugar
1 Tbl. baking powder
2 tsp. cinnamon
Glaze
1 cup powdered sugar
2 tsp cinnamon
1/2 tsp vanilla
2 Tbl. milk (more if needed)
Preheat oven to 350*F. Melt 1/2 cup butter and brown sugar over medium high heat. Cook until sugar mixture
bubbles, then add the milk, and stir until combied. Add white chocolate to hot sugar mixture and stir until smooth,
stir in vanilla
and set aside.
Sift flour, baking powder, and salt into a large bowl and set aside. Cream remaining 1/2 cup butter and white sugar
until fluffy, add eggs one at a time, and mix well. Mix in flour mixture and melted sugar mixture alternately,
beginning and ending with the flour.
Mix well after each addition. Pour batter into 2 buttered and floured miniature bundt pans (six cakes each pan),
and bake at 350*F for 20 minutes (toothpick inserted in center should come out clean but moist)
Remove from oven and let cool 10 - 15 minutes before removing from pans. Prepare glaze and spoon over cakes,
letting the glaze soak into the cake. 12 cakes.
