KEY LIME CAKE
1 1/3 c. sugar
1 (3 oz.) pkg. lime Jell-O
2 c. flour
2/3 tsp. salt
1 tsp. baking powder
1 1/3 c. cooking oil
1/2 tsp. baking soda
5 eggs
3/4 c. orange juice
1/2 tsp. vanilla
1 tsp. lemon extract
whipped cream
Topping:
1/3 c. fresh lime juice
1/3 c. powdered sugar
Preheat oven to 350 degrees. In a large mixing bowl, combine
all dry ingredients. Add eggs, oil, orange juice, vanilla and lemon extract.
Pour batter into a greased and lightly floured 9 x 13 x 2-inch pan. Bake for 25 to 30 minutes, or until a wooden pick comes out clean. Remove from oven.
Let stand 15 minutes. Prick cake all over with fork. Mix together topping ingredients. Drizzle over entire top of cake. Cover and refrigerate. Garnish with whipped cream.
