SAUERKRAUT CHOCOLATE CAKE
2/3 cup butter
1 1/2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
1/2 teaspoon salt
2 1/4 cups flour
1/3 cup cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1 cup water
2/3 cup rinsed, drained and chopped sauerkraut
1/2 cup chopped walnuts or pecans
Cream butter and sugar in large bowl. Beat in eggs, vanilla, and salt. Sift together dry ingredients. Add dry ingredients alternately with water to creamd mixture. Stir in sauerkraut and nuts. Pour into greased 9x13-inch baking pan. Bake at 350 degrees for 35-40 minutes. Frost with icing.
ICING
3 tablespoons butter
1 square unsweetened chocolate
1 cup powdered sugar
warm coffee
Melt butter and chocolate in top of double boiler. beat in powdered sugar, adding enough coffee to make it spreadable.
