Maple Nut Chiffon Cake

2 1/4 cups sifted cake flour or
2 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
3/4 cup packed brown sugar
1/2 cup cooking oil
5 egg yolks
3/4 cup cold water
2 teaspoons maple flavoring
1 cup finely chopped walnuts
8 egg whites
1/2 teaspoon cream of tartar
Sweetened whipped cream


Preheat oven to 325° F.

In a large mixer bowl, sift together cake or all purpose flour, sugar, baking powder and salt; stir in brown sugar and make a well in center.

Add cooking oil, egg yolks, water and maple flavoring.

Beat at low speed of electric mixer till combined, then at high speed about 5 minutes or till
satin smooth.

Stir in chopped walnuts.

Thoroughly wash beaters.

In a large mixing bowl, beat egg whites and cream of tartar till stiff peaks form.

Pour batter in a thin stream over entire surface of egg whites, fold in lightly by hand.

Turn into an ungreased 10-inch tube pan.

Bake in a preheated 325-degree oven for 65 to 70 minutes or till done.

Invert cake in pan; cool thoroughly.

Loosen cake; remove from pan.

Just before serving, frost with sweetened whipped cream and garnish with additional chopped nuts or halved strawberries.

Makes 12 servings
