MILK CHOCOLATE CAKE
2 cups sifted cake flour
1 2/3 cups sugar
4 tsp. baking powder
1 tsp. salt
5 Tbsp. cocoa
3 eggs
2/3 cup soft shortening
1 1/3 cups evaporated milk (diluted, half water)
1 1/3 tsp. vanilla
Grease and flour two 9" layer pans (or 13 x 9).
*HINT use cocoa to flour pan - will keep cake brown on outside.
Sift together the dry ingred. flour, sugar, baking pdr., salt, cocoa. Add shortening. pour in a little of the diluted milk,mix.
Add vanilla and the rest of the milk, mix. Add eggs. Mix. Batter may appear "curdled" but do not worry.
Bake in 350 oven for 30 to 40 minutes for layer pans; 35 to 40 for oblong pan. Bake until cake tests done.
MILK CHOCOLATE ICING
Melt together 5 Tbsp. shortening and 1/2 cup cocoa Stir in 2 2/3 cups sifted confections sugar and 7 Tbsp. hot scalded milk (can use evaporated milk) 1 1/3 tsp. vanilla
Beat until thick enough to spread.
