Mississippi Mud Cake

Cake:
2 cups all-purpose flour
2 cups sugar
1 stick margarine or butter -- cut up
3 1/2 tablespoons unsweetened cocoa powder
1/2 cup vegetable shortening
1 cup water
1 teaspoon ground cinnamon
1/2 cup buttermilk
2 large eggs -- beaten
1 teaspoon baking soda
1 teaspoon pure vanilla extract

Icing:
1 stick margarine or butter
3 tablespoons unsweetened cocoa powder
1/3 cup milk
1 box confectioners' sugar (16-ounces) -- sifted
1 teaspoon pure vanilla extract
1 cup chopped walnuts


Preheat oven to 400 F.

To make the cake, combine the flour and sugar in a bowl and set aside.

In a saucepan, combine the margarine, cocoa, shortening, and water, bring to a boil and remove from the heat. Add cinnamon and flour mixture and mix well. Add the buttermilk, eggs, soda and vanilla; mix well. Scrape the batter into a greased and floured 16x11-inch baking pan and bake until a straw inserted into the cake comes out clean, about 20 minutes.

Meanwhile, to make the icing, combine the margarine, cocoa and milk in a saucepan and bring almost to a boil, stirring. Add the sugar, vanilla and walnuts and stir until sugar is fully dissolved and well blended.

Remove the cake from the oven and let cool slightly. Pour the icing over the top, smooth with a rubber spatula, and let cool completely. To serve, cut the cake into 24 squares.

Note: My Aunt Lelah who lived in Columbia, MS used to add a layer of miniature marshmallows before pouring on the icing, sometimes....its deliciously decadent!!!
