"MOTHER-IN-LAW'S FRESH FIG CAKE"
1 1/4 c. vegetable oil
1 1/2 tsp. soda
2 eggs
1 tsp. salt
2 c. sugar
3 c. uncooked ripe figs, chopped
3 c. flour
2 tsp. vanilla
Preheat oven to 300 degrees. Combine cooking oil, sugar and eggs and beat well. Sift together flour, salt and soda. Stir into first ingredients. Add chopped figs and vanilla. Pour into greased and floured tube pan. Bake 2 hours until golden brown. Serve with whipped cream.. If desired, 1 cup chopped nuts may also be added.
