Mud Hens
1/2 cup butter or margarine
1 cup sugar
1 egg, whole
2 eggs, separated
1-1/2 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1 cup nuts, chopped
1/2 cup chocolate chips (semisweet or milk chocolate)
1 cup miniature marshmallows
1 cup light brown sugar
Cream butter and sugar. Beat in whole egg and 2 egg yolks. Sift flour, baking powder, and salt; combine with butter-sugar mixture; blend thoroughly. Spread batter in a 9- x 13-inch baking pan. Sprinkle nuts, chocolate chips, and marshmallows over the batter.
In a separate bowl, beat the two remaining egg whites until stiff, fold in brown sugar. Spread over top of cake. Bake 30-40 minutes at 350° F. Cut into bars.
