Nameless Cake

3/4 cup shortening
1 1/2 cup sugar
3 eggs
1 3/4 cup Gold Medal flour
1/2 tsp. baking soda
1/2 tsp. salt
3/4 tsp. nutmeg
1 tsp. cinnamon
3 Tbsp. cocoa
3/4 cup sour buttermilk
1 tsp. vanilla
1 tsp. lemon extract
1/2 cup pecans (cut up and toasted)

Icing:
6 Tbsp. butter
1 tsp. cinnamon
1 egg yolk
3 cups powdered sugar
1 1/2 Tbsp. cocoa
1 1/2 Tbsp. hot coffee


Preheat oven to 350° F. and grease cake pans or muffin tins.

Cream shortening and sugar gradually. Cream thoroughly. Mix in well-beaten eggs.

Sift flour once before measuring. Sift flour and all dry ingredients together and add to creamed mixture alternately with the sour milk. Add flavoring and nuts.

Pour into well-greased and floured 8 or 9-inch layer cake pans, or bake in cupcake tins. Bake for 30 minutes at 350º F.

Cool and ice.


To make icing:
Cream butter and blend in egg yolk.

Sift sugar, cocoa and cinnamon all together and add to creamed mixture, alternating with hot coffee. Beat until smooth. If necessary, add a few more drops of coffee until
icing spreads easily.

This cake is one that the DeConcini family traditionally uses for birthdays. It was discovered by the Senator's mother, Ora, about 25 years ago in a magazine. The cake was part of a contest whereby you tried the recipe and submitted a name for the cake. Needless to say, since the cake is still nameless, Mrs. DeConcini never learned who had won the contest or what the cake was named.
