Neopolitan Cake

Cake:
4-eggs
1-cup sugar
2-cups cake flour
1/8-tsp salt
3-tbsp butter
1-cup warm milk
1 1/2-tsp vanilla
3-drops red food coloring
2 1/2-tbsp cocoa
2 1/2-tbsp warm milk

Filling:
2-egg whites
1-cup confectioner's sugar
2/3-cup butter

Frosting
1/4-pound (125 g) cream cheese
2-tbsp milk
1/2-tsp vanilla
4-cups confectioner's sugar
2-drops red food coloring


Cake - Beat the eggs well. Add the sugar and continue beating until light and fluffy. Sift the flour with the salt and add to egg mixture. Mix the butter with the warm milk until melted and add to the flour egg mixture with the vanilla. Mix gently but thoroughly.

Divide the cake mixture into three equal portions. Mix the red food coloring into one. Mix the cocoa with the warm milk and add to the second portion. Leave the third portion plain.

Butter and flour three *-inch cake tins and pour in the three portions. Bake in a 350º oven for about 25 minutes. Cool slightly, then turn out.

Filling - Mix the egg whites and the confectioner's sugar in the top of a double boiler. Put over hot water and beat until firm. Remove from heat and continue to beat until sift.

Cream the butter until very soft. Fold into the egg white mixture. Spread between cake layers.

Frosting- Mix together the cream cheese, milk and vanilla until soft and smooth. Slowly add the sifted confectioner's sugar and mix until thoroughly blended. Add the coloring and spread on the top and sides of cakes. Serves 8-10.
