Cake Norwegian Apple Walnut Bundt

NORWEGIAN APPLE-WALNUT BUNDT CAKE

1 1/2 c sugar
1/2 c packed brown sugar
1/2 c oil
2 eggs, slightly beaten
2 tbsp rum or vanilla extract
4 c chopped, peeled Granny Smith apples
2 c sifted flour
2 tsp baking soda
1 tsp cinnamon
1 tsp salt
1 c chopped walnuts
2 c prepared fondant

Combine sugar, brown sugar, and oil in mixer bowl. Beat until creamy. Add eggs, rum and apples; mix well.

Sift flour, baking soda, cinnamon and salt together. Add to batter; mix well. Stir in walnuts. Pour into greased and floured bundt pan. Bake for one hour at 325 degerees, or until cake tests done.

Cool for 15 minutes in the pan, then invert on a wire rack and allow to cool completely. Roll fondant on confectioner's sugar coated surface.

Cover cake with fondant. 12 servings.
