Olive Oil Cake
CAKE
2 cups flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. salt
1 tsp. ground nutmeg
1/4 tsp. ground allspice
2 cups sugar
1 cup olive or vegetable oil
1 cup buttermilk
1 tsp. vanilla extract
3 eggs
2 cups canned, chunk pineapple
1 cup chopped walnuts (optional)
TOPPING
1/3 cup sugar
1/3 cup buttermilk
2 tbsp. unsalted butter
1/4 tsp. baking soda
Juice of 1/2 lemon
Preheat oven to 350 degrees. Grease a 9" X 13" baking pan. Mix all dry ingredients in a bowl. Stir in oil,buttermilk, and vanilla. Beat in eggs, one at a time. Stir in pineapple and nuts.
Pour batter into prepared pan and bake for 35 to 45 minutes, or until a toothpick inserted in the center, comes up clean.
Meanwhile, back at the stove, combine all topping ngredients in a small saucepan and bring to a boil. Simmer, stirring for 3 minutes.
Remove the cake from oven and place it on a rack to cool sightly. Pierce the cake all over (until it screams!) with a wooden skewer. Pour the topping evenly all over cake. Serve warm or cool.
