Cake Peaches and Cream

Peaches and Cream Cake

1 (2 layer size) butter flavor cake mix
1-1/2 c. sugar
4 TBS. cornstarch
4 c. chopped fresh peaches
1/2 c. water
2 c. whipping cream
2-3 TBS. powdered sugar
1 c. sour cream

Prepare cake mix according to package directions, using two 8-inch round cake pans. Cool and split each layer. Combine sugar and cornstarch in a saucepan.

Add peaches and water; cook over medium heat, stirring constantly, until smooth and thickened. Cool mixture completely. Combine whipping cream and powdered sugar in mixing bowl; beat until stiff peaks form.

Spoon 0ne-third of peach filling over split layer of cake; spread 1/3c. sour cream over filling. Repeat procedure with remaining cake layers, peach filling and sour cream, ending with remaining cake layer.

Frost with sweetened whipped cream. Garnish with fresh peach slices, if desired. Store in refrigerator.
