Pineapple Cake
1 box WHITE cake mix
3 eggs
1 20 oz can CRUSHED pineapple
1 8 oz can CRUSHED pineapple
1 large box INSTANT vanilla pudding mix
1 1/2 c milk
12 oz thawed Cool Whip topping
2 c flaked coconut
Mix cake batter according to box (make sure directions call for 3 eggs) Do not adjust for high altitudes. Spray a jelly roll pan (10 in x 15 in). Pour batter in pan. Bake at 350 degrees for 25 min. Cool to room temperature.
Using a long tined fork, poke holes all over cake. Pour crushed pineapple and juice over cake. Mix dry pudding
mix with milk. Blend well. Fold in Cool Whip. Spread over pineapple and cake. Sprinkle with coconut. Cover and refrigerate overnight.
