PINEAPPLE YUMMY CAKE
2 cp flour
2 cp sugar
2 eggs
2 tsp baking soda
1 can (1 lb 4 oz) crushed pineapple, in juice
FROSTING
1 small can (5 oz) evaporated milk
1 cp sugar
1/2 cp (1 stick) margarine, cut into pieces
1 cp shredded sweetened coconut
1 cp whole pecans
1 tsp vanilla
Heat oven to 350* ; lightly coat 9 x 13 x 2 inch pan with cooking spray.
Beat the cake ingredients in a large bowl on low speed until well blended, about 1 minute. Pour into prepared baking pan.
Bake for 30 to 35 min, or until top springs back when lightly touched.
Meanwhile combine milk sugar and margarine in medium size saucepan. Boil for t minutes or until consistency of thick soup. Remove from heat. Stir in coconut becans and vanilla. Let cool. Pour over cake.
