Plum Cake
1 cup butter
4 eggs
1 cup sugar
1 tsp. grated lemon peel
1/4 tsp. cinnamon
1 tbsp. rum (optional)
1 1/2 cups flour, sifted
1 lb. Italian plums (approx)
confectioners sugar
Preheat oven to 325° F.
Beat butter until creamy, add eggs, sugar, lemon peel, cinnamon and rum and beat until light and fluffy. Mix in flour, blend well and spread 3/4 inch thick on a greased and floured baking tin.
Cover neatly with halved plums, skin side up, and bake at 325 degrees for 20 to 25 minutes. Remove from oven, sprinkle with sugar while still warm. Serve warm or cold.
Note: Other fruit, such as halved apricots, pitted cherries, or sliced firm peaches can be used instead of plums.
