Preacher’s Cake
Cake:
2 c. flour
2 c. sugar
2 eggs
2 tsp. soda
1/2 c. chopped pecans
1 (20 oz.) can of crushed pineapple, including juice
Mix all, blending well. Grease a 9 x 13 cake pan. Add ingredients and spread. Bake 25 to 30 minutes at 350 degrees.
Frosting:
1 (8 oz.) pkg of cream cheese
1 stick of margarine
1 tsp. vanilla
1 lb. box of powdered sugar
1 c. coconut
1/2 c. chopped pecans
Mix well and frost cake.
