Prize Sponge Cake

5 egg yolks
5 tbs. cold water
1 cup fruit sugar
1 cup flour
1 teaspoon lemon extract
1 teaspoon vanilla
1 teaspoon cream of tartar
5 egg whites


Preheat oven to 325 degrees F.

Combine egg yolks water and sugar Beat at high speed for 5 minutes. Add flour, beat until combined.
Carefully mix in the lemon and vanilla extracts.

Beat egg whites until foamy. Add cream of tartar. Beat until stiff and fold carefully into first mixture Bake in ungreased tube pan for 70 minutes at 325°
