Pumpkin Date Torte

PUMPKIN DATE TORTE

1/2 cup dates, chopped and sugared
1/2 cup walnuts, chopped
2 tablespoons flour
1/4 cup butter
1 cup brown sugar
1/3 cup pumpkin, canned
1 teaspoon vanilla
2 eggs
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup flour, sifted
1/4 teaspoon ginger
1/2 teaspoon nutmeg

1. Preheat oven to 350 °F. Grease a 9-inch round baking pan which is at least 1-1/2 inches deep.

2. Combine dates, nuts, and 2 tablespoons flour. Set aside.

3. Melt butter over very low heat, blend in brown sugar, then turn off heat. Stir in pumpkin and vanilla. Beat in
eggs, one at atime.

4. Sift dry ingredients together. Add slowly to the pumpkin mixture.

5. Stir in date/nut mixture. Spoon batter into pan.

6. Bake for 25 minutes. Cool completely on rack, then remove from pan. Serve with whipped cream flavored with rum.
