Pumpkin Pie Cake
1 box Yellow Cake Mix (remove 1 C.)
1 Stick Margarine, melted
1 Egg, beaten
Mix together with a fork. Press into a greased and floured 9 x 13-inch pan and set aside.
Filling:
1 Large Can Pumpkin (29 oz.)
3 Eggs, beaten
1/2 C. Brown Sugar, packed
1/4 C. Sugar
2/3 C. Evaporated Milk
1 1/2 t. Cinnamon
Mix filling ingredients together and pour over prepared cake mix in pan.
Topping:
1 C. Reserved Cake Mix
1/2 C. Sugar
3/4 C. Chopped Nuts (optional)
1/2 Stick Margarine, cold
Mix together reserved cake mix, sugar and chopped nuts. Cut margarine into mixture until like coarse meal. Sprinkle over pumpkin. Bake at 350 for 50-55 minutes.
