PUMPKIN ROLL
Mix three eggs, 2/3 cup pumpkin, 1 cup sugar, 1 tsp. salt, 1 tsp. soda, 1 tsp. cinnamon and 3/4 cup flour.
Place dough on a greased cookie sheet covered with waxed paper. Sprinkle with 1/3 cup nuts. Bake 12-15 minutes in a 375* oven. Prepare a clean hand or dish towel with powdered sugar and place dough on towel. Roll dough in towel and place in the freezer for 5 minutes.
For the filling mix 1 cup powdered sugar, 1 tsp. vanilla 1-8 oz. pkg. cream cheese and 2 Tbsp. butter and beat with mixer. Unroll bread and spread on filling. Re-roll loaf and keep in the refrigerator.
(NOTE -- These directions are taken directly from the original recipe -- but please don't re-roll the loaf until you've removed the towel.)
