Pumpkin Roll
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp. lemon juice
3/4 cup flour
1 tsp. baking powder
1/2 tsp. nutmeg
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
powdered sugar for sprinkling
Filling:
1 cup powdered sugar
2 (3 ounce) pkg. cream cheese
4 tbl. margarine
1/2 tsp. vanilla
Preheat oven to 375 degrees F. and grease a 15 x 10 x 1-inch jelly roll pan.
Beat eggs on high for 5 minutes. Stir in sugar, pumpkin, and lemon juice. Fold in flour, baking powder, nutmeg, cinnamon, ginger and salt. Spread out in prepared pan and bake at for 15 minutes.
Put cup towel on counter and sprinkle with powder sugar, pour the cake on cup towel while hot, roll up and put in refrigerator to cool. Combine filling ingredients.
When cool unroll cake and fill. Spread on cake, roll up, wrap in foil, and put in freezer or refrigerator.
