Rhubarb Torte
Serves 6-8
1 c. flour
8 T. unsalted butter (I use margarine)
5 T. confectioners' sugar
2 large eggs, well beaten
1/4 t. salt
3/4 t. baking powder
1 c. sugar
1 t. vanilla
3 c. rhubarb, diced
Cream the flour with the butter and confectioners' sugar. Press in the bottom on an 8x8 pan and bake 12 min. in a 350 oven. Combine the remaining ingredients and spread over the crust. Return to the oven and bake 30 minutes more. Serve warm or cold-can serve with vanilla ice cream or whipped cream.
