Ricotta Lemon Cake

2 cups sugar
10 eggs
2 pounds ricotta cheese
grated lemon rind of 2 lemons
16 ounces cherry pie filling


Preheat oven to 375 degrees and grease and flour a 13 x 9-inch baking pan.

Cream the sugar and eggs together with electric mixer. Add the ricotta cheese and lemon rind and mix on low speed. Put in prepared baking pan. Bake at 375 F. for about 45 minutes. Cut in squares and serve topped with chilled cherry pie filling.
