Spice Cake

1/2 cup shortening
1 tbsp. molasses
1 1/2 cups sugar
1/2 tsp. salt
1/4 tsp. cloves
1/8 tsp. nutmeg
1 tsp. vanilla
2 eggs
1 cup of milk
2 1/2 cups of Sifted Cake Flour
1 tbsp. double acting baking powder


Preheat oven to 375 degrees. Prepare two 9" round pans or one 13 x 9-inch.

Cream together shortening, molasses and sugar. Add salt, cloves, nutmeg and vanilla. Beat in eggs. Alternately add milk and flour. Stir in baking powder by hand. Pour into prepared pans. Bake for 25 minutes or until tester shows done.Rest on racks for 15 minutes, remove and allow to cool completely before icing.


Boiled Icing

1 cup dark brown sugar
1/8 tsp. salt
1/2 cup of heavy half n' half
3 tbsp. butter
1 1/2 tbsp. light corn syrup
1 1/2 tsp. Vanilla
1 to 2 cups sifted confectioners sugar


In a heavy guage saucepan or double boiler, mix brown sugar, salt, half-and-half, butter and corn syrup. Allow to come slowly to a boil; boil 1 minute. Remove from heat and allow to cool slightly.Stir in vanilla. With a mixer, beat in confectioners sugar to desired consistency.

Optional addition:
1 tbsp. instant coffee crystals
