Spice Cake
2 1/4 cups sifted cake flour
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
3/4 tsp baking soda
1/4 tsp cloves
3/4 cup Crisco
1 cup granulated sugar
3/4 cup packed dark brown sugar
3 eggs
1 tsp vanilla
1 cup buttermilk
Preheat the oven to 350F, makes 2 9-inch layers
1. Sift the dry ingredients into a bowl, set aside.
2. In mixing bowl, cream the crisco and sugars until light and fluffy, several minutes. You want it to go past the
grainy stage, scrape the bowl.
3. Add the eggs, one at a time, scrape in between, add the vanilla.
4. Alternate the dry ingredients and the buttermilk, you want to start with the dry ingredients and to end with the
last addition of dry ingredients.
5. Divide the batter between 2 9-inch pans (prepared with shortening and flour or bakers grease-my favorite, no
worries!!!)
6. Bake in a preheated oven 350F, 25+ minutes until it tests done, the center will be firm to the touch, but spring
back. Cool in the pans 5 minutes, then turn out and turn right-side-up. Cool completely on a rack. Frost with a
spiced buttercream or cream cheese icing.
