Strawberry Cake w Fresh Strawberries
1 cup butter or margarine
2 cups sugar
3 cups all-purpose flour
4 teaspoons baking powder
1 cup milk
4 eggs
1/4 teaspoon salt
1 teaspoon vanilla
Strawberry Cake Filling and Topping (see below)
Preheat oven to 350. In a large bowl, cream butter and sugar.
Add eggs, one at a time, beating well after each addition.
Sift together flour, baking powder and salt. Add to first mixture alternately with milk and vanilla.
Pour into 3 greased cake pans.
Bake for 25 to 30 minutes.
Makes three layer cakes or 36 cupcakes.
Strawberry Cake Filling And Topping
1 1/2 quart fresh strawberries, sweetened to taste
2 cups sugar
1 pint heavy whipping cream
4 Tablespoons sugar
3/4 teaspoon vanilla
Assemble cake:
Whip cream with 4 Tbsp sugar and vanilla until peaks form.
Let strawberries and 2 cups sugar stand until juicy. Spread a layer of berries and juice on first layer of cake.
Cover with a layer of whipped cream.
Continue with second layer in same manner, carrying whipped cream down over sides of cake.
Store in refrigerator.
