STRAWBERRY FESTIVAL CAKE
1 package yellow cake mix for 2 layer cake
1/2 C light rum (optional)
(1) 4 oz. package whipped topping mix
(1) 10 oz. jar strawberry jam
6 fresh strawberries, halved for garnish
Prepare cake as package directs, cool. With a sharp knife cut each layer in half horizonally to have 4 layers. If you
like, spoon the rum over the layers at this point.
Prepare 1 envelope whipped topping mix as label directs; set aside. Spread 1/3 C jam over each of the three layers, then spred the whipping topping over the jam. Stack cake, putting plain layer on top.
Prepare second envelope whipped topping mix and spread on side and top of the cake, garnish with the halved strawberries. Refrigerate until ready to serve.
Makes 10 - 12 servings
