SUGAR PLUM PUDDING CAKE
2 c. flour
1 1/2 c. granulated sugar
2 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped prunes
3/4 c. margarine
1 c. buttermilk
1 1/4 tsp. soda
2 eggs, beaten
Glaze:
1/4 lb. margarine
1 c. sugar
1/2 c. buttermilk
1 tsp. vanilla
Sift together dry ingredients. Cream margarine and sugar; add eggs. Add dry ingredients alternately with buttermilk. Fold in prunes, pour into greased and floured 9 x 13-inch pan. Bake at 350 degrees for 25 minutes. Pour glaze over hot cake.
Glaze Directions: Boil together margarine, sugar and buttermilk. Remove from heat and add vanilla. Pour over hot
cake.
