Swedish Almond Cake
Cake:
2 eggs
2/3 sugar
3/4 cup flour
1/2 cup butter
2 Tbsp heavy cream
Frosting
4 Tbsp butter
1/3 cup slivered almonds
3 Tbsp sugar
1 Tbsp flour
1 Tbsp cream
Preheat the oven to 325 degrees. Beat the eggs and sugar together until the mixture is light and foamy. Mix the flour with the baking powder and add to the egg mixture. Melt the butter over low heat and let cool. Add the cream and melted butter to the batter. Butter and flour a round cake pan. Pour the batter into the pan and bake for 25 to 30 minutes.
While the cake is baking, combine the frosting ingredients in a small saucepan. Cook, stirring constantly, until the mixture bubbles. Pour this over the cake and bake another 5 minutes. Makes 12 servings.
