Sweet Potato Cake
1 (18.5-ounce) package spice cake mix without pudding
2 cups BRUCE'S SWEET POTATO PIE FILLING
4 large eggs
1/4 cup water
1 (1.3-ounce) envelope whipped topping mix
Lemon Glaze
Preheat oven to 350 degrees F.
Beat first 5 ingredients at medium speed with an electric mixer 2 minutes. Pour batter into a greased and floured 10-inch Bundt pan.
Bake at 350° for 45 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan, and cool completely on wire rack. Drizzle with Lemon Glaze.
Lemon Glaze:
2 cups powdered sugar
1/4 cup lemon juice
Whisk together ingredients until smooth.
