Sweet Potato Cookbook from the Virginia Sweet Potato Commission
Sweet Potato Tea Cake
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 cup granulated sugar
1 cup cooked, mashed, sweet potatoes
2 eggs, beaten
2/3 cup melted margarine
1/2 cup shredded coconut
1/2 cup raisins
1/2 cup walnuts
Preheat oven to 350 degrees F. Prepare an 8 1/2"x4 1/2"x2 loaf pan with cooking spray.
Place all dry ingredients in mixing bowl and make a well in center. Add all other ingredients. Stir just enough to moisten. Bake at 350º for 1 hour. Cool before slicing.
