Texas Sheet Cake by Mona M

1/4 c. cocoa
1 Tbsp. cinnamon
1 c. water
2 c. sugar
3/4 c. margarine
2 eggs
2 1/2 c. flour
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla
Chocolate icing (recipe below)

Preheat oven to 400. Grease jelly roll pan and set aside.

Mix cocoa and water in a saucepan. Add margarine. Bring mixture to a boil; cool slightly.

Blend together (do not beat) sugar and eggs in large mixing bowl.

Sift together flour, baking soda and cinnamon. Blend in cocoa mixture.

Add dry ingredients alternately with buttermilk, stirring after each addition, until well blended.

Stir in vanilla.

Pour into prepared pan and bake for 20 minutes.

Frost immediately with chocolate icing.


Chocolate icing

1/2 c. margarine
1/4 cup milk
3 to 4 c. powdered sugar
1/4 c. cocoa
1 tsp. vanilla

Melt margarine in milk in small saucepan.

Mix cocoa and powdered sugar; stir into milk mixture.

Add vanilla. Mix well. Spread on cake.
