Thunderstorm Cake

3 eggs
150 grams (3/4 cup less 1 or 2 tbsp.)
1 tsp. vanilla
200 grams ground hazelnuts
1 tsp. baking powder
1 tbsp. cocoa
350 grams pitted sour cherries (would use canned)
1-3/5 cups cherry juice
3 medium bananas
1 (4-seving-size) package vanilla pudding
4/5 cup cool whipping cream
1 tsp. vanilla


Preheat oven to 350 degrees F.

Beat eggs with hand mixer until foamy (about one minute). Beat in sugar and vanilla in one minute, beat two more minutes. Mix hazelnuts, baking powder and cocoa and gently fold in. Pour in greased, parchment lined 10 inch springform pan. Bake at 350° for about 25 minutes. Let cool a bit, remove rim from pan and let cake cool completely on a wire rack.


For filling slice bananas and put on cake. Make a pudding (cooking kind) with powder and cherry juice, be sure to add no additional water or sugar. Fold in cherries and spread on bananas on cake. Whip cream with vanilla and a little sugar. Now it get's a bit weird as I miss the name of this thing: where you put in whipped creams or buttercream to garnish cakes, you know? Anyways, after the cherries are cooled you fill the cream in this bag and put small dots all around the rim of the cake. Then you "paint" lightning on the cake and spread its sides with the remaining cream.
