Waldorf Astoria Red Cake

1 cup shortening
1 1/2 cups sugar
2 eggs
2 oz. red food coloring (1/4 cup)
1 teaspoon vanilla
2 heaping tablespoons cocoa
2 1/4 cups cake flour
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon salt
1 tablespoon vinegar


Preheat oven to 350 degrees F. Cream shortening, sugar, eggs.

Make a paste of food colouring and cocoa. Add to creamed mixture. Add buttermilk alternately with sifted flour and salt. Add vanilla. Add soda to vinegar but hold over bowl as it foams. Then add the soda mixture, blending instead of beating.

Bake 25 to 30 minutes at 350 degrees in two 8 inch greased and floured layer pans. Cool on rack.
Split each layer in two.


Frosting:
3 tablespoons flour
1 cup milk
1 cup sugar
1 teaspoon vanilla
1 cup butter


Cook flour and milk until think, stirring constantly. Cool. Cream sugar, butter and vailla until fluffy. Blend into milk and flour mixture.
