Yogurt Poppy Seed Cake
1/4 cup poppy seeds
1 cup yogurt (plain or vanilla)
1 cup butter
1 1/2 cup sugar
2 tsp. vanilla
2 tsp. baking soda
4 eggs separated
2 cups plus 2 Tbl. sifted flour
Grease and flour Bundt pan. Soak the seeds in the yogurt while assembling the cake. Cream butter and sugar. Add yogurt/seed mixture, egg yolks, and vanilla, beat well. Add flour and baking soda. Beat egg whites until stiff and fold in gently. Bake at 350* for approx. 45 minutes. You can top this with powdered sugar or a lemon glaze.
