Yummy Coconut Snack Cake

2/3 cup shortening
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon -- divided
1/2 teaspoon salt
1 cup buttermilk
1 cup flaked coconut
1 cup sugar
1/2 teaspoon ground nutmeg
1/4 cup half-and-half
Preheat oven to 350° F.
Cream shortening and brown sugar until light and fluffy. Add eggs and vanilla; blend thoroughly.
Combine flour, soda, 1 teaspoon cinnamon and salt. Add to creamed mixture alternately with buttermilk, beginning and ending with dry ingredients; beat well after each addition.
Spoon batter into a greased 9x13-inch baking pan.
Combine coconut, 1 cup sugar, 1 teaspoon cinnamon, nutmeg, and half-and-half; spoon over batter. Bake at 350 F. for 35 minutes or until cake tests done.
Makes one 9x13 cake
