Zucchini Fudge Cake
Source: August/Sept. 99 Taste of Home.
1 cup butter or margarine, softened
2 1/2 cups sugar
4 eggs
2 teas. vanilla extract
3 cups flour, all purpose
1/2 cup baking cocoa
2 teas. baking powder
1 teas. baking soda
3/4 teas. salt
1 cup buttermilk
3 cups shredded zucchini
3 1/2 cups prepared chocolate frosting
Preheat oven to 350° F and grease and flour three 9” round baking pans.
In a mixing bowl, cream butter and sugar.
Add eggs, one at a time, beating well after each addition.
Beat in vanilla.
Combine flour, cocoa, baking powder, baking soda and salt; add to creamed mix alternately with buttermilk.
Stir in zucchini.
Pour into prepared baking pans.
Bake for 25-30 minutes or until cakes test done.
Cool for 10 minutes; remove from pans to wire racks to cool completely.
Frost between layers and top and sides of cake.
