Cake Zuppa Inglese

Zuppa Inglese
Southern Living November 1999

2 cups half and half
3 egg yolks
3/4 cup powdered sugar
5 TBSP. All-purpose flour
1 teaspoon grated lemon rind
1/2 cup whipping cream
1 (4oz.) Semisweet chocolate bar, chopped
1 (12 oz.) Frozen poundcake thawed
1/4 cup blackberry brandy or light rum
Garnishes: Sweetened whipped cream, chocolate shavings


Whisk first 4 ingredients in a heavy saucepan until blended. Cook over medium heat, whisking often. 15 minutes or until thickened. Stir in lemon rind, and set custard aside.

Combine whipping cream and chocolate in a small glass bowl and microwave on HIGH for 1 minute; stir until smooth

Cut cake into thin slices, and sprinkle with brandy.

Layer half of custard, half of cake, and half of chocolate mixture into 4 (10 oz.) compotes; repeat with remaining custard, cake and chocolate. Chill 2 hours. Garnish, if desired.
