Carrot Cake by Autumn

CARROT CAKE

2 c. sugar
2 c. flour, sifted
1 t. salt
2 t. cinnamon
1 t. soda
1 1/2 c. oil
4 eggs
3 c. grated raw carrots
1 c. chopped walnuts


Preheat oven to 350° F.

Combine ingredients with an electric mixer, adding eggs one at a time.

Add nuts and carrots last.

Pour into baking pan-- oblong, angel food, or 2 layers.

Bake for 40 minutes if using a layer pan; bake 1 hour and 20 minutes if using an angel food pan.



FROSTING

3 oz. cream cheese
1/4 c. cream
1 t. vanilla or to taste
2 1/2 c. sifted powdered sugar


Blend cheese and cream; add vanilla and sugar.

Cake may be frosted while warm.
