Company Cheesecake
from From Portland's Palate... A Collection of Recipes from the City of Roses

Crust:
1 cup graham cracker crumbs
2-1/4 cups granulated sugar, divided
1/4 cup butter (1/2 cube), melted

Filling:
5 (8-ounce) packages cream cheese
1/4 cup all-purpose flour
1/4 teaspoon salt
6 eggs
1 teaspoon freshly-squeezed lemon juice
1/2 cup whipping cream


Preheat oven to 500 degrees. Grease sides and bottom of 9-inch springform pan.

Crust: In a medium bowl, combine crumbs with 1/4 cup sugar and butter. Press crumb mixture into bottom of pan. Chill crust while making filling.

Filling: In a large mixing bowl, beat cream cheese until fluffy.

Mix 2 cups sugar with flour and salt. Slowly add to cheese mixture. Add eggs one at a time, mixing thoroughly after each addition. Beat in lemon juice and whipping cream until smooth.

Bake 15 minutes at 500 degrees. Reduce heat to 250 degrees and continue baking for 1 hour and 30
minutes.

Cool before removing from pan.

Serves 12 generous slices
