Bailey’s Chocolate Chip Cheesecake
Crust:
3 cups graham cracker crumbs
1/3 cup sugar
9 tablespoons melted butter
Filling:
32 ounces cream cheese
1 2/3 cups sugar
5 eggs
1 cup Bailey's Irish Cream
1 tablespoon vanilla
1 cup semisweet chocolate chips
Coffee cream:
1 cup whipping cream
2 tablespoons sugar
1 teaspoon instant coffee powder
chocolate, shaved
Preheat oven 325 degrees. Spray a springform pan with cooking spray.
Crust: In a bowl combine crumbs, sugar and butter. Press into the bottom and 1" up the sides of pan. Bake until lightly brown approx. 7 minutes.
Filling: Beat cream cheese and sugar until smooth with electric mixer. Add eggs and continue to beat. Add Bailey's and vanilla. Sprinkle half of chocolate chips over crust. Spoon in filling.
Sprinkle with remaining chocolate chips. Bake 1 hour and 20 minutes or until golden brown and springy in the center. Cool completely in fridge.
Cream: Beat cream, sugar and coffee until peaks form. Spread over cooled cake. Shave chocolate over the top for garnish.
