24 graham cracker (1 1/2 cups) -- crushed
1/4 cup sugar
1/4 cup melted butter
1/2 teaspoon cinnamon

Filling:
1 pound cream cheese
4 eggs separated
1/2 cup sugar
3/4 teaspoon vanilla

Topping:
1 pint sour cream
1/2 cup sugar
1 teaspoon vanilla


Preheat oven to 375 degrees F. Mix crust ingredients and press on botton and slightly up sides of springform pan. Set aside.

For filling beat cream cheese, egg yolks, sugar and vanilla till fluffy. Stiffly beat the egg whites and fold them into the cheese mixture. Bake 30 minutes in a 375 degree oven. Cool 15 minutes.

Increase the oven temp to 475 degrees. Mix the topping ingredients and when the 15 minutes are up spread the topping carefully over the cake. Return it to the oven for 10 minutes. Remove and cool. Refrigerate several hours or overnight.

You can spoon cherry pie filling or other fruit pie filling on top just before serving.
