Cherry Swirled Cheesecake
1 1/4 cups chocolate cookie crumbs
1/4 cup sugar
1/3 cup margarine, melted
1 (21-ounce) can cherry pie filling
1 teaspoon grated orange rind
2 (8-ounce) packages cream cheese, softened
1 (14-ounce) can sweetened condensed milk
3 eggs
1/3 cup lemon juice
1 teaspoon vanilla extract
Preheat the oven to 300 degrees. Combine the crumbs, sugar, and margarine; press firmly on the bottom of a 9-inch springform pan. In a blender container, puree the pie filling until it is smooth; add the orange rind.
In a mixer bowl, beat the cream cheese until it is fluffy. Gradually beat in the sweetened condensed milk until it is smooth.
Add the eggs, lemon juice, and vanilla; mix well. Pour half of the batter into the pan; top with 1/2 cup puree.
Repeat the layering. With a knife, swirl the puree into the cheese mixture. Bake for 50 to 55 minutes or until the
center is set. Cool; chill. Serve with the remaining puree.
