Chocolate Baked Alaska Cheesecake
1 cup chocolate wafer crumbs
2 tablespoons sugar
3 tablespoons butter, melted
24 oz cream cheese, softened
2/3 cup sugar
3 large eggs
1 tsp vanilla extract
3 egg whites
7 ounce jar of marshmallow cream
Combine first three ingredients and press into bottom of a 9 inch springform pan.
Bake at 350 degrees for 10 minutes. Set aside.
Melt chocolate over low heat in a heavy saucepan stirring constantly.. Set aside.
Beat cream cheese at medium speed until creamy. gradually add 2/3 cup sugar, beating well.
Add eggs one at a time, beating after each addition. Stir in melted chocolate and vanilla. POur into prepared pan.
Bake at 350 for 50 minutes.
Remove from oven and gently run a knife around the deges to loosen cake and cool completely in pan on a wire rack.
Beat egg whites at high speed until soft peaks form. Gradually add marshmallow cream to egg whites and beat until
stiff peaks form.
Remove sides of pan from cheesecake. Place cheesecake on a baking sheet and carefully spread egg white mixture over top and sides of cheesecake. Bake at 325 degrees for 25 to 20 minutes or until golden. Serve immediately.
