Cheesecake Czech Lemon Meringue

CZECH LEMON MERINGUE CHEESECAKE

1/2 c. unsalted butter or margarine, softened
1/2 c. sugar
2 egg yolks
1 c. flour
Rind of 1 lemon, grated

FILLING:

8 oz. pkg. cream cheese or DRY cottage cheese
6 tbsp. sugar
2 egg yolks
3 tbsp. sour cream
Juice of 1 lg. lemon
1/4 c. raisins (optional)

TOPPING:

4 tbsp. sugar
4 egg whites

Make dough by blending the first 5 ingredients in a medium size mixing bowl and work them into a dough. Let dough rest for 1/2 hour, wrapped, in the refrigerator. Butter a 10 inch "deep dish" pie plate.

Roll out the dough to fit pie pan. Prick all over with a fork. Bake in 350 degree oven for 10 minutes. To make filling, beat together cream cheese, sugar, egg yolks, sour cream and lemon juice until very light and fluffy. Fold in the raisins, if desired, and put the filling into the baked pie crust.

Make meringue by beating egg whites until stiff, then gradually adding sugar a tablespoon at a time. Beat at high speed of mixer until forming stiff peaks. Spread over filling, smoothing it with a wet knife. Bake in middle of a
very hot oven (475) for about 5 minutes or until golden brown. 15 servings.
